I would suggest "occum's razor" that is: the simplest explaination is most likely the correct one. seems to me, if the low fuel light is on, it is because the sensor that detects low fuel "thinks" there really is low fuel. Since we know that there is plenty of fuel, this would point to the sensor. The problem is that I don't know if the fuel sending unit has a separate "low fuel" sensor or if it in itegrated. (my best guess is that it is integrated .. anybody out there know for sure?) However I do know that replacing the fuel sending unit is easy and not too expensive. lift up the floor board in the trunk/hatch and simply unscrew it.
