Rally drivers often use all three pedals at the same time. This technique is use to minimize clutch damage when down shifting. The clutch is used for the obvious reasons. The brake are used to slow the wheels alittle while the gas pedal is used to bring the engine up to the proper speed to ensure a smooth shift into the lower gear. It helps if the brake and gas pedals are about the same height and close together.
