When you regrind the valves, they go further into the head, resulting in the stem moving closer to the cam. You must adjust this length, using a special guage, so it is back within limits. If this hasnt been done, you might be outside the adjustment range of the hydraulic tappets, which is causing them to take a while to adjust themselves.
