I would think the oil type and temperature of the coolant are not related to closely. Synthetic should actually cause it to run cooler. I run 10/30 Mobil 1 synthetic. I assume that you are running engine oil (the redline 10-40). Make sure that the oil level is OK and that there are no leaks. Check to see that the coolant level is ok. You may want to change the thermostat and fan switch to 82degC units and see if that helps.
