Antifreeze acts as a corrosion inhibitor, which is essential in a mixed metal engine, to reduce electrolytic action between the alloy head and cast iron block. You may be ok short term, but can expect problems. Corrosion of the waterways in the head for example can lead to a blown head gasket, and dismantling can be exceedingly difficult on some cars due to the build up of deposits/corrosion of head studs and bolts. Given the minimal effort required to change the coolant, I would suggest this is done asap IMHO.
