When you start the engine, the ABS pump will draw some fluid into the accumalator, possibly droping the level below the minimum mark. The fluid dropping may be a leak, or may be worn pads (when the pads wear, they allow the piston to move further out in the caliper, so allowing more fluid into the caliper, so dropping the level).
