Simon, It might be quite simple. When you make a sharp turn, oil in the oil pan will shift to the opposite direction. When the oil level is on the low side, without being too low according to the dipstick, the oil pump may temporarily lack some oil and you get a pressure drop. Usually, topping up to max level solves the problem. OTH, when the oil level is near to max, there is obviously something else going on. What happens when you accelerate on a straight road? If you still see the light come on, it will be related to the engine itself (oil pressure switch, oil pump, main bearings, etc). If not, we have to re-think. PLS let us know. Good luck.
