Parking in gear is a useful backup to stop the car just freewheeling away if the handbrake fails or isn't engaged properly, but it's not going to pevent it moving if it's on a steep enough hill. You might have found that the car had rolled all the way into the street and across the other side if the gear hadn't been engaged, though...
