I don't look at them, I just let them see me watching the light closely and non-chalantly creep the car forward a bit every couple of seconds, looking like I'm concentrating on taking off. Don't be too obvious, you want it to look like you might be taking off, or you might just be watching the light and accidentally rolling forward. When the light changes, I pull away at a slow "out for a drive in the country" pace. The other driver races off and then realizes he was mistaken about my intentions... and I imagine he feels like a fool for assuming that everyone wants to race him.
