Wild guess: the parts of the brakes which were protected by pads being clamped during parking would be protected from atmospheric moisture and therefore some corrosion. The exposed parts would tend to corrode, even if only slowly. When you started to use the car's brakes, the rubbing action would polish the surfaces and make all parts equally smooth again.
