I'm having the same problem, but only on very cold mornings. If it is very cold outside the temp gauge won't go up to the middle where it normally is, it will instead go in the middle of the normal spot and cold. If you do have a problem with the coolant temp sensor (that is what tells the engine the temp) the temp gauge will just shut off and won't come back on till the car is restarted. It does this because the car has timers in the engine that record how long it takes for the engine to get to a certain temp level depending on different conditions. If it takes to long to get to the right temp then the gauge shuts off. If the gauge shuts off 2 or 3 times in a week or so the check engine light will go on and you will have to pick up a new sensor(mine was $22 bucks a few weeks ago) and is very very simple to install, takes maybe 2 minutes.
