A 3" exhaust from turbo, free-flow cat, new inlet pipe to turbo, K&N filter and a knowledgeable reprogramming of the ECU. You'll be looking at some 300 hp even though the 9-5 Aero turbo is slightly smaller than the turbo in the 9000 Aero. Also the 2001 9-5 Aero can reputedly be upgraded to slightly higher hp output than the 1999 and 2000 models.
You might want to check out http://www.saabtuning.com or this link: http://www.chipcenter.cc/english/databas.asp?bilnr='955'.
Just make sure that you get the increased diameter inlet pipe to turbo. Check out this link: http://www.bsrab.se/se/_saab_9-5_aero_-2000_steg3.html, where it's referred to as "specialluftrör till turbon". This is a key modification to get serious performance from the 9-5 Aero.
Me, I'm just waiting for my upgraded Sachs pressure plate so that I can get rid of my slipping clutch and finally use my power...well, at least use it as soon as spring arrives...
Take care!

P.S Get the above mods and the "M5EATER" sign... That's what I'd do... Honestly, the M5 is slightly overrated. It's far too heavy and the chassis has been built too much with comfort in mind. Why pay that kind of money for a car and still be forced to modify suspension and brakes to get serious performance? D.S
