You don't indicate how many miles went by during those "few months" so it's difficult to determine how much oil was used. Also, your question seems to suggest that in the previous !80K miles it wasn't using any oil at all between changes (although you didn't indicate how far you drove between changes). Is that true?

My experience over the years with my own two Saabs with this motor (a 2000 9-3 base and a 2002 9-5 Aero) is that they will consume some oil, though there are some owners who report no usage at all. Both of my cars have over 120K miles and have the latest (and last) PCV update, and using Mobil 1 0W-40 the 9-3 uses a quart every 2,500 miles or so, and the Aero uses a quart about every 1,800-2,000 miles or so. I change oil and filter every 5,000 miles. Usage can vary a bit depending on how hard and how fast I drive (I suspect that those that report no oil usage at all drive quite moderately). If your usage turns out to be similar to mine, I wouldn't worry (but I'd recommend switching to 0W-40 instead of the 10W-30 you're using now. Even better, try Mobil 1 High Mileage 10W-40. After all, you've got 180K miles and you did not mention piston rings among the list of things renewed). I get my oil analyzed by Blackstone Laboratory and the "wear" numbers always look good.

Back in the olden times Saabs went forever without using oil, but at some point around the turn of the century Saab went to a "short skirt" piston and ring design to reduce internal friction and increase fuel efficiency. One of the unintended consequences was oil slipping past the piston rings, and this wasn't helped at all by the six different failed PCV designs they tried, and tried again.
