The temp sensor dropping to the bottom peg does get your attention, but it removes any temperature information beyond "not warming up as fast as it thinks it should." After that, simply cycle the ignition off and on, and check the gauge. Assuming the typical thermostat failure mode of not sealing completely, the gauge should read in the operating range, meaning the engine will run normally. But should the gauge still read at the bottom, it means the thermostat is so completely stuck open that the engine might continue to operate in the rich mixture region, which risks plugging the catalytic converter and diluting the oil with fuel.
An alternate check is your fuel consumption. So long as it stays about the same as it was before the gauge signaled a bad thermostat, it's running with a normal mixture and you have no worries.
