I would not rule out the fuel pump just yet. I've seen at least one that give up the ghost, only to have the ghost come right back days later.
to confirm, I'd check voltage at the pump the next time it does not spin up. Maybe rig an LED at the dash ... the pump should receive 12v for about 5 secs when you turn the key "on".
If you are not getting that 12V, I'd check the FP relay(s). if those are good ... ignition switch ... if the ignition switch is good I think you'd have to turn your attention to the dark arts (TWICE)
