For the Saab, definitely refill by weight. The gauges are a useful tool for troubleshooting. I've found ambient temp effects the high side pressure and any blockage(s) in the system will result in too great a high side pressure. The temp of cold air is pretty close to the low side pressure. A temp gauge to insert air vents is useful to test progress.
The gauge/manifold set is a useful way to add freon. Also, unless you have a license, you may find it difficult to purchase bulk (20-30 lb tank) of refrigerant forcing you to use the small cans.
