'99 9-5 V6 Head Gasket - any words of wisdom?

Hello everyone,
I'm pretty sure that the head gasket(s) are going out on my '99 9-5 V6. It has 162k miles.
Symptoms:
* When starting, the engine goes 'chug chug chug' and I get a small cloud of white smoke for a few seconds, which then disappears completely and the engine runs as normal
** This cloud of white smoke doesn't smell much like oil - more like fuel and coolant (first big sign of head gasket)
* Coolant level is going down of its own volition (heater bypass valve is dry)
* Coolant expansion tank cap hisses softly after a longer drive
There is no oil in coolant.
Does anyone here have hints, tips, or suggestions on how to complete the head gasket change process? I know that after mid-2000 the head gaskets were changed on the V6 9-5, and the older gaskets are more likely to fail. Is it an option to use the newer head gasket on the older car? Does that even make a difference?
The car has not overheated since I've owned it (though I know this says nothing of prior owners). Getting it home was a full hour drive and it didn't overheat then - so maybe that's a sign that the heads are OK?
