Left to right variation is likely due to those suspicious springs. Maybe one has failed? Left to right variation can also be due to a blown out shock. It's hard to imagine other culprits, though you have found plenty of evidence to suspect funny business. When you take it all apart give it a hard look you may find failed bushings, bent control arm, etc.
I agree that replacing springs and shocks is the right move to start. I'd go with OEM *used* springs, spacers and good shocks. (no benefit in getting new OEM springs ... I found this out the hard way!)
