Hi Jen, I read your last post about the other car.
Don't get hung up on whether the stereo has an ipod adapter, I picked up a really nice aftermarket w/ ipod and usb adapter for about ~$200, I'm sure you can find a cheaper one though, so that shouldn't be a big issue.
The main thing is the condition the car is in. All the perks are nice, but a stereo with an ipod adapter won't really matter if the car isn't up to par.
The things you mentioned - that the headliner, headgasket, clutch and brakes were all replaced - are great. These are some of the main nags and issues (I'm about to undertake replacing the headgasket on my own car myself). You're looking for rust in the right places too :) Check the bottoms of the door sills, when you open the door, look at the bottom where there is a rubber strip running along the sill of the door.
Did you test-drive the car? rev the engine and see if the revs go up and drop smoothly. Get it into 3rd gear and make sure the power is consistent.
You'll definitely like the leather interior more than the cloth - what condition is the leather in? if the seams are coming unstitched, that can be fixed with a needle and thread, but tears in the seats are another matter...
