The top access aperture does not require a new seal - or at least it didn't on any transmission I ever worked on. The wire that holds it on is very tight, and the rubber seal should be quite supple. It's kind of meant to take off more frequently, because this is where you remove the clutch shaft if you ever want to change the clutch or anything like that.
And you're right, I've never gotten a transmission cover plate gasket to re-seal. You'll need new ones for side plate and diffy cover.
If you plan to use the drain plug, be aware that sometimes they are in there rather tight. Some heat or a hammer will dislodge it.
My two cents on oil is that it's more important to have clean, fresh oil in there than it is to have a good quality oil. I've used all sorts of oil, and the fact is a good transmission shifts good and a bad one shifts bad. If it shifts bad, oil will only make an incremental improvement.
