getting the headliner out is pretty well detailed at the twinsaabs website iirc. Yes, you need to remove grab handles, sun visors, etc. Not very hard. The only thing is it is 1 large piece and a little fragile, so it helps to either have another set of hands, or a few wooden boards to prop it up while you work. FWIW, I was able to do a couple sedans on my own, and those have to pass through the trunk to get out!
You will have no luck pinning to the foam - it is disintegrating and it has no structural qualities whatsoever. Just take the headliner out if you can't see, and drive it like that until you have it done.
Sunroof is another bit of work. Not too hard, but need to take it off the track. If you don't have one, that part will be easy!
Don't worry about tearing the old fabric. You are going to need to buy new. Headliner material is readily available from many fabric stores (possibly special order though, so plan ahead).
