Your description of the engine temperature INCREASING during the highway driving seems to indicate your radiator is suspect.
If you're still using the original radiator, maybe now is a good time to swap in a new one (~$135 from eEuro). I've noticed immediate improvements on both my 87 and 92 900s here in Los Angeles in regard to warm-weather cooling ability from the engines after I installed new radiators.
And if you're replacing the radiator, it might also be a good time to replace all the hoses with new versions. I've hunted down small pinhole leaks from old hosing; the process lost its entertainment value after four or five times.
And if you're replacing the radiator and hoses, now might be a good time for a new fan switch and thermostat (82 deg).
And if you're replacing the fan switch and...just kidding. That should be it. These cars handle hot driving conditions quite well when everything is functioning correctly.
