I think you'll find there isn't much of a rule here. We don't really know what sort of condition your springs are in, or your bushings, or your alignment and there is some remarkable variation between different brands of the same size tire. A given spec - eg "205" - is mostly just a suggestion, or a class if you will. One 205/xx/yy tire could be several mm wider or narrower than another. And, that's what you're playing with here - a few mm.
I would say in general a 16x7 ET 40 wheel will be able to fit most any 205/50 tire reliably. You may be able to go 215/45 or even 225/45 or 225/40 with the right pieces in play. My SPG is lowered on Brad's suspension with a rear axle relocation running 17x7 ET 38 wheels and I have zero issues with 215/45-17 tires in several brands. I've been able to use 225/45 and 225/40 tires in certain brands... cheater slicks won't clean, but random street tires have been fine.
Unfortunately, with so many variables, you're probably going to need to try out some combinations to see what works for you.
