Your quotes (other than the transmission) seem very, very high. So I assume you were planning on someone else doing the work. Again excluding the transmisison, you can do this work yourself for about half that. Trionic conversion can be done for less than a $1000 ($2500 if you buy everything new from eeuroparts as I did). An engine rebuild is less that $500-1000 if you tear it down and take it to the machine shop yourself (ridiculous pistons and connecting arms not included per your description): you can buy an engine cheap ($250) and do a rebuild over the winter while continuing to drive the car.
Just set up a punch list of upgrades and work your way through it over several years - that's what makes it a hobby and is one of the great satisfactions of driving a classic car. People are less impressed that I drive a 30-year old car than they are when They find out I figured out how to do all of this myself through research and trial and error.
I've got numerous one-day projects just waiting for the more pleasant Autumn weather: lowering my front intercooler so I can install my E-codes, installing my 85 exhaust cam/NA intake cam set-up, refinishing a set of aero wheels. Then there's the biog projects : acquiring a complete set of transmission tools(About $1200 into that so far; then I need to learn how to use them (that research is done, soon comes the practical exam). Two transmissions waiting for me to take a crack at them. I shop on Ebay for parts daily - when I find a deal, I buy the parts, inspect them and label the box and set them on to-do shelf.
This doesn't have to be an enormous strain on your wallet or your time. It's just a matter of patience.
