Your proposal of 700 lbs total in the back sounds reasonable. I've carried that much in bags of concrete mix (it's only 9 x 80 lb bags) without any problems. Assuming you don't have a front seat passenger I would try to put a couple of hundred pounds in the passenger footwell to even things out as much as possible.
