Yes, that bolt holds the expansion valve in place. Remove it and bye-bye refrigerant.
I don't remember having any real problem moving the evaporator when I replaced the blower motor in my '97 CSE but it was 6-7 years ago and I don't recall all the details. As Noel notes in his writeup it's not really all that terrible a job, especially compared to most other cars which require complete removal of the dashboard to get into the HVAC system.
If your heater core is old now is the time to replace that as well. The usual advice is to do both at the same time. (I only replaced the fan motor because the previous owner had recently taken care of the heater core.)
