If the O2 (Lamda) sensor is simply unplugged and the rest of the Lambda system (controller, modulating valve, etc.) is operating correctly, then they system simply goes to a "default" pulse relation and will generally run OK. However, if the car still has a good Catalytic Converter on it, there's no reason not to put a good O2 sensor in and let the system run correctly. Basically you would just install the new sensor, hook up the pulse relation meter (I can lend you one or send you instructions how to build one) and adjust the mixture screw.
As Don said, if the rest of the Lamda system is not operating (no buzzing modulator valve) then there would need to be more troubleshooting.
