Having done a good "refurbishing" of my 1972 Saab 95 (not a full-blown restoration), from a monetary standpoint you're correct that "...it's not worth a restoration..." except to a very very limited number of folks.
The conundrum I see is that while the condition looks OK in the pictures (and from your description), I feel it's even a smaller "market" of folks willing to tackle the job -- especially when it involves getting the car in "as is" condition. I think you would get best value by at least getting it to the point of having someone being able to drive it.
If you have a Saab-person relatively near you, that would be good, else my gut feeling tells me you'll have long time selling parts and junking the rest. I hope I'm wrong... :-(
