The issue with using a rim at the max end of the range is that the tire stretches out a bit horizontally to reach the edges. So, your 186-65 becomes (roughly) a 185-60.. your sidewall is very low, and you don't have a lot of tire under you.
Compared to a 195/65/15 (25.0 diameter), your setup with have a rough diameter of around 24.0. That's a fairly substantial error. It's going to be very light in the corners.
Might be fun if you want to learn "drifting".
