If they are really going to align the car, which means camber as well, then they will need to shim it. Toe in the rear can also be changed using shims. That can take a while to do, plus they also would need to purchase the shims. Now, if they are only going to align the front, then heck anyone can do that in an hour.
Wheels bolts-Im not sure how you are going to get the proper torque with the wheels off the ground, I know its doable, but it makes zero dif either way. I have never torqued wheels while they are off the ground; I have had a few cars that I have auto-xed which have been corner balanced and aligned at shops with every damn race car, and all of them do it with car on ground. But to each there own. Tell them the way you want it down.
My viggen can only go up in the air on a drive up rack, tell them you want that as well, make sure they have boards so they don't scrape the bumper.
