I'm in PA - I've sold my cars on local CL mostly. (except the 9k I listed here). I've sold about 6 in the past few years.
I take deposit in the form of a check - but that stays in my wallet (all you take that for is to get a solid commitment -it's just a piece of paper) - when the buyer returns with the envelope full of crisp hundreds, he gets the check back.
If the buyer wants a bill of sale, or a receipt for deposit, he gets it - otherwise not. Most are pretty casual about it.
For the sale, we either meet at, or drive to, one of several trusted notaries specializing in title transfers, who handle all paperwork and supply a fresh plate, which we screw on - and buyer drives away happily.
All you need to know in advance, is what that notary or title service requires from both buyer and seller: usually both drivers licenses, seller's clear title, buyers proof of insurance, buyer's check to the state for plate and taxes and usually buyer's cash for the notary (they know better than to take checks).
