I used to use Petersen two piece ramps. When the extenders were removed they left plenty of room for jack stands at the lift points as you mentioned. I would also often use a second set of jack stands at various frame points depending on where/which end I was working.
I have also employed the stacked wooden support method (mostly when working under a riding mower) and with the exception of the stack often being in the way, feel quite safe with an emergency backup like that.
