Definitely in favor of support redundancy when working under the car. A cousin was crushed when a car he was working under fell. I don't know the details but it wasn't a good scene.
I usually have wheel chocks, jackstands, and the floor jack (touching but not bearing much load, as you describe). And periodically check the feet and angle of the jackstands, repositioning if not looking safe.
