Lots of possible problems, some easier to check than others:
Faulty thermostat (a thermostat stuck open can sometimes be as bad as one stuck closed)
Air still in the cooling system
Old, soft suction hose collapsing not letting the water pump pull when it gets hot
Clogged hoses or tubes from water pump to block
Clogged passageways inside block - something could have gotten dislodged while you were working on the engine.
A gasket inside the engine is covering a coolant passage
Worn water pump not moving enough water
Loose fan belt
Incorrect ignition timing
