As you said, the front is pretty easy -- 10 bolts and it comes off in one piece, all the way back to the base of the windshield. (You have to disconnect the headlight pop-up rod, too, which is the hardest part.)
The back fiberglass is harder, because it's partly riveted and bonded in place. I've never even tried to take mine off. People who have tell me it involves drilling out the rivets, prying, pulling, etc.
Before you do that, I'd suggest making sure it's really necessary. If you're going for a Pebble-Beach-quality "body-off resto," yeah, I guess you have to do it, but if not... most of the rust points in the back are the horizontal panels (passenger compartment floor, trunk floor, rear axle tunnel) and these are pretty accessible from both above and below once you've stripped out the interior and pulled the gas tank.
