You could very likely have a bad master cylinder. It can be triggered by the bleeding activity. Here is what can happen:
During normal use the piston in the master cylinder never goes all the way in. So, that part of the cylinder wall never gets wiped clearn and can get rough and possibly corroded over time. Especially if the brake fluid gets stale/contaminated.
So, you go do the brake job and bleed the system. The master cylinder piston while pumping the brakes, gets pushed all the way in and the seals have to travel over those rough parts of the cylinder wall that haven't been used in years. The seals themselves are probably not in the best of condition too. As a result the seal may get damaged and now it can't hold fluid and the pedal goes slowly to the floor.
It hasn't happened to me but I have heard of this. It is one arguement in favor of pressure bleeders on older cars.
