On my previous car, a 2001 9-5, it was possible to change the behaviour of the temperature gauge with Tech2. The car was programmed at the factory so the needle will stay right in the middle of the gauge when the engine was between 83 degrees and 115 degrees. So, this way, even if you climb a very steep hill at wide open throttle, everything would look normal.
It was possible to modify the "normal zone" thresholds with Tech2 and I did it. The new normal zone was from 98C to 100C. After that, the gauge would do what you see on your gauge; a fluctuating needle as in the good old days.
Now, I can't find this information for this modification in WIS for the 9-3SS (where I can find it for the 9-5), so I doubt it is still there. But your gauge seems to reflect the true temperature that your eSID shows.
Since I tracked my 9-3 on both winter and summer track days, if it was as true to the engine temps as yours, I would have noticed it. But I don't remember anything except the needle dead straight in the midlle.
