I'd say 17" is the maximum rim size I would ever put on a 9-5. If you go 18" the ride is going to be very harsh. It's been done it they look decent, but it's up to you. In my opinion when you put low profile wheels on a 9-5 with the stock suspension they look kind of doofy. You may want to look into lowering springs too.
The pinstripe can be removed. Saabs never came from the factory with pinstripes so any pinstripe put on it a 9-5 is after the fact and over the clear coat. You just have to determine if it's a decal or painted on. My 9-5 is steel grey with a double line pinstripe with black and RED of all colors in it. I hate it. Unfortunately it's painted on and that requires paint thinner to remove it and I don't trust myself going near my car with paint thinner so I have to have a body shop do it if I want to. A decal is more easily removed. There's a tool I think by 3M that you attach to an electric drill and it "erases" the pinstripe.
