If you think your Saab has head gasket issue, I would check the coolant system, to see any oil fixed in. You can also buy a head gasket testing kit from a part store for $40 or less, and it takes less than 30 mins to do.
For oil lose, when the shop replaced the head gasket, did they re-surface the heads at the same time? Check your rear muffler, to see any oil build up. What grade of engine oil you are using?
I had a similar experience with my older truck, but it had 160K on it, so it was O.K. to lose 1Q per 1k miles within the spec. I took it to two different shops, one of them even put it on the lift, and had someone sat inside to step on the gas, hope to see any major oil leaks; at the end, they suggested to open up the top end of the engine, if I said "NO".
