Interpreting OBD II MAF readings

In trying to diagnose an idle/ 1500 rpm surge or stumble in my 2003 9-5 Linear of about 145,000 miles I recently obtained a graphing OBD II scan tool and am a bit unclear of how to interpret the MAF g/s readings. My understanding is the value should increase more or less relative to throttle position, and the reading should remain more or less consistent as long at the throttle is held steady. The first part of the last sentence holds true with this car and scanner when idling or blipping the throttle – the g/s increases with more throttle - the question is should the reading vary significantly while holding steady throttle.
Today on returning from work at highway speed I was more than a bit surprised to see the g/s drop fairly smoothly and steadily from about 30 or so to 5 all while maintaining speed and throttle position. The car didn’t appear to mind. Needless to say no codes are being thrown.
