Airtex is only a repacker of parts, albeit good products most of the time.
It's not that the thermostat is sticking open but that it gets lazy opening too early making the engine run too cold for too long setting off the C/E light.
A few more miles down the street, the engine temperature is getting up to normal values but at that point it is too late for the hyper sensitive emission program they loaded.
Pre T7 engine computers we really never knew when the thermostat failed in this way, we only saw when it failed shut.
Maybe long past the thermostats prime and in colder climates, driver might wondering why it took so long for the heat to build up and at that point they might have put in a new thermostat but there were no C/E lights telling you about it.
