The 9-5 is a solid car, at around 100k miles your looking at everything needing replacement, water pump, t stat, fuel pump, idm, throttle body, idler pulleys, everything. Any car that makes it past 150k mikes without having to replace one of these is running on borrowed time. Not everything needing replacement can make the head gasket blow but a few can. Loosing a idler pulley at high speeds will destroy the serp belt and the water pump will nolonger run. If the car isn't stopped immediately the heat of the motor will redline causing head gasket failure. This is one example, there are many more but in each case something went wrong to have the head gasket blow. If you rebuild the motor and not address the problem you'll blow your newly installed head gasket. Off the top of my head these are major head gasket killers.
Not working water pump, frozen t-stat, oil pump, plugged up oil stump, turbo leaking or burning oil or rad fluid and then being neglected on refill. There are many more but this is what comes to mind.
I agree 100% with Boris the failure of the head gasket was the result of a major problem and fixing the gasket isn't going to fix the prob. On an 2003 make sure it has the pvc update done to the motor. If it's not there it 100% the failure was do to the oil stump being clogged. Then your looking at the problem being the car was ran on no oil till the head gasket blew. Not good for piston rings
