Not a particularly good idea.
I think the best value is a low mileage, fairly pristine example. The prices are IMO low enough, it is really hard to justify buying a "project" car. "Project" cars are more the kind people just donate to you, hoping the car can avoid the crusher.
In my opinion the '06 a newer is less trouble, as the climate control system on '05 and earlier cars degrades and is a bear to fool with. '04 and newer is better than earlier, since you choose almost entirely from high output fours in this way (IMO avoid '04 and '05 Linear wagons). Sixes are to be avoided at all cost.
I would shop for automatics and sedans, and you buy the manual wagon only when you luck into one. I drove only stick Saabs for decades, but IMO the 5 speed version of the Aisin checks enough boxes that I don't reject 'em - not when all the other boxes are checked.
What you call a "project" car is a what I call a 9-5 with a nice black or med gray interior, I can salvage and put into an otherwise nice car with a ruined parchment interior. The parchment is just not up to extended use, I feel.
