As Simon said, you install the rubber gasket around the thermostat. You also have to install the thermostat with the little loose "valve" toward the top.
Lastly, did you bleed the air out? Mostly this consists of buttoning it all up, then loosening the brass bleeder nipple that's right near there (looks like a larger vacuum port with two hexes and nothing connected to it). Open it up (you'll need two wrenches. Just loosen the top part, don't remove it from the housing), start tie car, and run until the coolant flows out of the bleeder without any bubbles. Then tighten the bleeder, and top up the coolant.
