Perusing the Internet I found a picture of a similar installation kit for a Porsche 914. In addition to the gauge and harness, it showed a sensor mounted in a L-shaped brass bracket, providing both support and ground.
The VDO temp sensor and switch pages have a variety of sensors which are visually similar to the one in the picture. On that basis I am going to suggest that you are looking for a 250F/120C single contact, standard ground sensor. There are several of these, with varying mount threads. As you will presumably be making your own bracket, feel free to pick a size that meets your size and space requirements. There are also floating ground variants should your choice of mounting position provide inadequate grounding. P/N for most of these is 323-xxx.
