I was hoping someone else would jump on this who might know a bit more and I could avoid some typing :) Anyway, I wouldn't worry about the oxygen sensor. I doesn't come online until the engine has warmed up significantly. While cold the engine relies heavily on the AMM which is why it is often responsible for a car that runs poorly when cold but fine when warm.

-First, triple check for vacuum leaks. Suck and blow on all tubes hooked into the intake manifold. All should hold vacuum. I'd especially suspect the hooter valve and the charcoal cannister.

-You can indeed check the NTC sensor, though as you said it rarely fails (and it's a total bitch to get to.) You may want to just unplug it and take the car for a short drive. I believe the computer reverts to a preset of 70 degrees, about ambient for a cold engine. Or you can use an ohm meter and a contact thermometer with the chart below (for 2L engines):

-I would also check the throttle poition switch and reset base idle you can find directions at http://www.townsendimports.com

-There's no harm in adjusting the AMM and seeing if it helps. Richening will have a more dramatic effect when cold and the AMM has great control of the micture then. As the engine warms up, the oxygen sensor takes over many of the duties. The resistence between pins 3 and 6 is base lined at 380 ohms. Raising this richens the mixture. There a way to determine the ideal position, but it requires a special sensor. Some people seem to prefer it set between 600 and 800 ohms so you might wan't to give that a try and see what hapens.

-Your AIC valve also seems slow to repsond. The power steering puts an increased load on the engine which it should be compensating for. This could be the valve itself or something giving it bad information. The valve has specified resistences but I can't find the documentation on that right now. Hoepfully checking out the other stuff will fix this problem too.
