For speaker building, the best is of course Vance Dickason's Loudspeaker Design Cookbook, but it's a bit technical for a beginner, so others may be more suited if you are just getting started. Even Radio Shack has some decent speaker building books, I think some car stereo books, too.

As for matching speakers to other components, that isn't too critical, but you do want to try and match them to your tastes and your car. There aren't very many speakers on the market, be they retail or if you buy the woofers and tweeters and put the system together yourself, that cannot be driven by any good car amp or head unit. The only time you may run into trouble is if your speakers are very inefficient and you are running them of the power built into your head unit, which could leave you wanting more volume and less distortion. Crossover design can be very simple, or extremly complex, depending on which angle you take. Crossovers are the art of speaker building, you'll get many different opinions about what works best. Myself, for car use, I have stayed with very basic crossover designs, using top quality components. This contrasts with most retail systems which either use even simpler designs with dirt cheap components, or slightly more complex than my designs, with slighly better components (still much lower quality than what I use). Just remember, there are often at least two markups near 100% when you buy a set of speakers are retail. So, you can spend $100 and get $25 worth of parts, or you can spend $100 and get a speaker equivalent to $400. In some cases that's a slight exaggeration, in some cases it's putting things mildly.

In addition to Crutchfield, I'd recommend checking out Madisound Speaker Components, who can sell you all the parts you need to build a speaker system, and they also will design and build crossovers for you. They too should have books available.
