You could do that and make a few bucks. Especially for things like turn signal lenses, headlight enclosures, front grill, etc. But remember that you'll need someplace to pack these things up and ship them, so make sure you have a UPS or FedEx "depot" or store that handles these things nearby. Usually, most of the office supply stores handle this, although they limit the weight they will ship. Then you'll have to deal with people's bounced checks, people who claim the part shipped was damaged, etc., etc. It can be done, but think it out carefully.
Any junkyard will haul away a carcass, but you might have to pay them to do so! I recall a charge of about $200 to have an old 900 carted away.
Personally, I'd do the car donation, and take the $700 tax credit. After all the work you'd do, you'd probably make about that anyway (if you are lucky ;-)
