You have asked about the first - security of payment. I have recently encountered situations where a cashiers check would not be accepted! I would ask for a Certified Check, take it to your bank (with the buyer) where the bank can verify it with a telephone call, then on to the other problem.
Vehicle Title. Only sign over your title in the presence of a DMV (Secretary of State here in Michigan) agent. This will immediately clear your name from the title. Too many horror stories of sold cars being involved in accidents (sometimes months later) and the seller being sued because the buyer never retitled the vehicle in their own name.
Yes this is a hassle and may consume most of an afternoon, but how much will it cost you later if the paper is no good or the car is not retitled?
