I use a G5 iMac at work, and an Intel Duo MacBook at home, so I can speak to this a bit.
The Intel Macs really are a lot faster using Apple's own software (which have been updated for the Intel chip). Safari is noticeably zippier, as well as Firefox (which also has been updated). I enjoy using my Intel-Mac quite a bit. iTunes, iMovie, iPhoto -- all very zippy on the newer machine.
But . . . non-updated third party software runs better on the G5. Photoshop Elements 2.0 for me is the primary one I notice.
To me, it all depends on how much Photoshop, InDesign, and MS Office you use. I don't use them very much, so for me the Intel Mac is a better deal.
A refurbed G5/20" for $1000 is a great deal. But any drawbacks to the Intel Macs will be addressed via software updates in a matter of months, and all things being equal the Intel chip itself really is much faster.
As in all things, it depends on what you want versus what you can afford.
